Epic Chakalaka
Chakalaka is a traditional South African dish, known for its bold and spicy flavours. It is a vegetable relish made with a base of onions, tomatoes, and peppers, and includes carrots, beans, garlic, ginger, and various spices like curry powder, chili, and paprika.
We love Chakalaka for Breakfast alongside our Thin Breakfast Wors, some decent Sourdough, a couple of fried eggs, fresh chillis and a drizzle of chilli oil.
To make Chakalaka you need:
- 200ml sunflower oil (or any other oil you like to use!)
- 2 red onions
- 6 garlic cloves
- 1-2 green chillies, deseeded and chopped
- 1 thumb sized piece of ginger, finely grated
- 2 tbsp mild, medium or hot curry powder - whatever floats your boat
- 3 peppers (mix of red, green and yellow)
- 5-6 large carrots, grated
- 5-6 large tomatoes or 2x400g cans chopped tomatoes
- 2 thyme sprigs, leaves only or 2 tsp dried thyme
- 1x400g can of baked beans
- 3 tsp salt
- 2 tbsp sugar
Cooking Instructions:
Heat the oil in a large casserole dish set over to a medium heat. Add the onion, carrot and peppers and cook until soft and caramelised. 10-15 mins.
Crush the garlic and add into the casserole dish with the chillies, salt, and sugar. Grate the ginger and add it to the pot, cook for 1-2 minutes.
Add in the curry powder and stir to make a paste. If the mixture begins to catch add a splash of water to stop it from burning.
Stir in the tomatoes, thyme and cook for 30 minutes, simmering gently.
Add in the baked beans and bring to the boil. Reduce the heat and simmer for a further 10 minutes at least until the vegetables are tender and the mixture has thickened.
Check for seasoning.
Chakalaka can be made in advance and is particularly good when it had time for the flavours to develop for a day or two! Gently reheat on the hob or in the microwave.
Proper Pap
Traditionally, Chakalaka is served with Boerie and Pap (a maize porridge). So we couldn't really leave you hanging without a decent Pap recipe! Below our Proper Pap with chunks of Traditional Boerewors and Epic Chakalaka. It does not get much better.
To make Proper Pap you need:
- 500g of Iwiza Maize Meal (you can buy it from Amazon and some Tesco stores too)
- 1 liter of water
- 20g of Salt (or Salt to taaste)
- 100g of fresh butter
Cooking Instructions:
Pour the water into a pot and bring it to the boil.
Add the maize meal and salt.
Stir in the maize meal with the back of a wooden spoon, you will notice the texture becoming quite stiff.
Turn down the temperature to the lowest setting.
Let is cook slowly for at least 40 minutes and stir every 10 minutes in a cut like motion with the handle of a wooden spoon.
To finish, add the butter and stir.
