Saucy Boerewors Stew - by Toby
Saucy Boerewors Stew
A hearty, flavourful stew with Boerewors, colourful vegetables and warming South African-inspired spices, all simmered in a rich tomato gravy. Serve over rice or creamy mash for an easy, comforting meal.

Ingredients
500g Boerewors Meat
3 carrots
2 red onion
1 red pepper
2 cloves garlic
Tomato purée 2 tbsp
Beef stock 250ml
Marmite 1tbsp
Cumin 2 tsp
Paprika 2tsp
Ground coriander 1tsp
Parsley (personal preference)
Method
Pre heat pan then add your sausage. Fry for roughly 5 minutes.
Whilst sausage is cooking dice your vegetables.
Once sausage is seared on all sides add your veg.
Fry for another 5 minutes or until the carrots have soften.
Add your tomato purée and spices and fry for 30 seconds before adding the beef stock.
Cover the pan and allow to gently simmer for 10mins.
If the stew is too wet either remove the lit to allow it to reduce or thicken with gravy granules.
Season to taste (I like to add marmite to mine as I had no Worcestershire sauce.)
Once the sauce has thicken to your desired consistency finish with chopped parsley ( I had none)
I finished mine by adding some broccoli florets as they were running on there last legs.
Serve over rice or mash.
This will be a winter classic in my house!
It sounds amazing and reminds me of home so this gets my vote
