How to Store Your Biltong & Droëwors
There’s nothing quite like a fresh bag of biltong or a good piece of droëwors - and with a little care, you can keep yours tasting just the way it should.
Because our biltong and droëwors are made fresh, we recommend keeping them refrigerated and following the storage advice below.

Biltong
Your biltong arrives in a brown paper bag — and that’s exactly where we recommend keeping it.
Keep it in the fridge
Pop your biltong, still in its paper bag, into the refrigerator as soon as you receive it.
Our biltong has a 10-day shelf life from the date of packing, so always check the best-before date on the label.
The paper bag is intentional. It helps protect your biltong while allowing it to breathe, rather than trapping moisture around the meat.
Let it warm up before you eat it
Biltong is best enjoyed at room temperature.
Take it out of the fridge before serving and give it a little time to come up to room temperature. This allows the flavour and texture to really come through.
Of course, if you like your biltong cold and chewy straight from the fridge, we won’t judge!
Once you’ve opened it
Simply fold or roll the top of the paper bag closed and pop it back in the fridge.
Try to avoid transferring your biltong into an airtight plastic container. Biltong is meant to breathe, and trapping moisture can affect its texture and freshness.

Droëwors
Our droëwors comes wrapped in wax paper, and we recommend keeping it wrapped just as it arrives.
Keep it in the fridge
Store your droëwors in its wax wrap in the refrigerator and always check the best-before date on the label.
The wax wrap helps protect the droëwors while keeping it in the environment it was made for.
Ready to eat?
Take your droëwors out of the fridge and let it come to room temperature before enjoying.
This brings out the flavour and gives you that lovely texture that makes droëwors so moreish.
And yes, we know how difficult it is to stop at just one piece!
After opening
Wrap any leftover droëwors back up in its wax paper and return it to the fridge.
Can I freeze my biltong or droëwors?
Absolutely.
If you’ve stocked up or simply aren’t going to get through it before the best-before date, freezing is a great option.
For the best results:
· Keep your biltong in its paper bag and place it inside a suitable freezer bag or container.
· Keep your droëwors in its wax wrap and place it inside a freezer bag or container.
· Remove as much excess air as possible.
· Freeze while the product is still fresh.
· When you’re ready for it, allow it to defrost in the refrigerator.
· Once completely defrosted, allow it to come to room temperature before eating.
Freezing can cause a slight change in texture, but it’s a great way to save your biltong or droëwors for another day.
What about white marks on my biltong?
Don’t panic!
You may sometimes notice a light, dry or powdery white coating on your biltong or droëwors. This can occur naturally as the product dries.
However, if anything looks unusual, feels slimy, or has an unpleasant or unusual smell, don’t eat it.
If you’re ever unsure, it’s always better to be safe.

We’ve chosen these materials for a reason, so there’s no need to transfer your biltong or droëwors into plastic containers.
Bring it to room temperature
For the best flavour and texture, take it out of the fridge before serving and let it come to room temperature.
Freeze what you won’t eat
If you’ve bought more than you can finish within the shelf life, freeze it while it’s fresh.
And most importantly…
Don’t leave it sitting out longer than necessary. Once you’ve had your fill, wrap it back up and pop it back in the fridge.
The short version

That’s it. No fuss, no fancy storage equipment — just good biltong and droëwors treated with a little bit of care.
